Easy Chocolate Almond Butter Bars

It may be September and most of the continent is thinking about fall. But in Hawaii it is still sunny and warm. This quick and easy dessert is perfect for those warm summer days when you just can't imagine turning the oven on but you crave a sweet chocolate treat.

You can use some creativity and top the bars with chopped nuts (I love it with macadamia nuts) or mini-chocolate chips.

I love this sweet treat on a warm summer day. It is perfect because it is a no-bake dessert, no need to heat up the house.

Ingredients

  • 1/4 cup coconut oil (melted)
  • 1/4 cup honey
  • 1/2 tsp vanilla
  • 1 1/2 cups almond butter
  • 3/4 cup almond flour
  • 3 Tbsp coconut flour
  • 1 Tbsp coconut sugar
  • 1/2 tsp cinnamon
Chocolate Ganache
  • 3/4 cup chocolate chips
  • 1 Tbsp ghee
  • 1 Tbsp coconut milk
  • 1/8 tsp sea salt

Instructions

  1. In a 8x8 pan put a few drops of oil and line with parchment paper. Lightly grease the parchment paper.
  2. In a bowl combine the liquid ingredients and stir well.
  3. Add in the almond butter, flours, and cinnamon. Stir until everything is combined.
  4. Spread into pan. Put into refrigerator to chill.
  5. In a double boiler on low heat melt the chocolate chips, ghee, and milk. Stir often and watch closely. Once chocolate is melted remove and let cool a few minutes. Stir in salt.
  6. Spread the ganache onto the almond bars. Top with nuts or mini chocolate chips if desired.
