Hawaiian BBQ Chicken Salad

I love salad and I love chicken. But even then it can become somewhat boring. This quick and easy meal has some fun tropical flavors that add a little zest into a classic.

I love this Hawaiian spin on a simple chicken salad. It is quick and easy, wonderful for a weekday lunch.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 head romaine lettuce, cut bite size
  • 1/2 cup carrots, shredded
  • 1 cup red cabbage, shredded
  • 4 radishes, sliced
  • 1/4 red onion, sliced
  • 1/4 cup olives, sliced
  • 1/2 cup Hawaiian BBQ sauce (I like Primal Kitchen)
  • 1/4 cup passion fruit juice (can substitute pineapple)

Instructions

  1. In a small skillet add the oil and cook the chicken until done, about 10 minutes. Add the BBQ sauce and juice, stir. Remove from heat.

  3. Spoon the salad into individual bowls and divide up the chicken. Spoon on some of the sauce as the dressing. Sprinkle a little sea salt and pepper on top if you like. Enjoy.
