Dinner Salad with Chicken and Papaya

Ok, so maybe a big bowl of salad isn't so original. But, living in the tropics there are many days that by dinner time I don't want to turn the stove or oven on. When I make this salad I usually use cold chicken from the day before. A massive bowl of salad with protein on top and a homemade dressing is very nutrient dense and healthful. Your body will thank you!

Of course you can mix things up depending on your personal taste and what you have in the fridge. I love the colors of this variety of ingredients. But, I do usually leave the cilantro off for my husband, he is NOT a fan. He calls cilantro 'weeds', can you imagine? Our son and I love cilantro. Plus it's great for detoxing.

Huge Dinner Salad with Chicken

On a hot summer evening, this is a nutritious and delicious meal.

Ingredients

  • 2 chicken breasts
  • Seasoning of your choice (I used Jerk seasoning)
  • 2 heads romaine lettuce
  • 2 cups fresh spinach
  • 2 cups spring mix lettuce
  • 1/4 head of radicchio
  • 2 carrots, cubed
  • 1/4 red onion sliced thinly
  • 1/4 cup sliced black olives
  • 2-3 eggs, hard boiled
  • 1 Tbsp cilantro (if desired)
  • Papaya Dressing (Search papaya and the recipe will come up)

Instructions

  1. Cook the chicken breast in a dish with a little olive oil and seasoning of your choice. Cook for about 30 minutes on 350 degrees, until internal temperature is 165 degrees.
  2. Mix all of the vegetables together in a large, really large, bowl.
  3. Slice or chop the hard boiled eggs.
  4. Put a large amount of the salad in individual bowls. Top with the chicken, egg and papaya dressing.

Notes

This salad is delicious with either hot or cold chicken. Or to save time you can use store-bought rotisserie chicken.
