Tropical Paradise Guava Cupcakes
One of my favorite things about living in Hawaii is the delectable fresh tropical fruit. I usually make my own puree but I found this local puree and thought I'd make cupcakes. They are glorious! The light and refreshing guava flavor will transport you to a tropical beach.
You can always bake and frost the cupcakes and then freeze half if you are too tempted with them on the ready.
Guava Cupcakes

Guava is the taste of the tropics. These paleo cupcakes are delightful. Perfect for a summer party or even a weeknight dessert.
Ingredients
- 1/2 lb guava, chopped ((or use store bought puree))
- 2 eggs, large, room temperature
- 1/4 cup coconut milk, full fat
- 2 Tbsp ghee
- 1 cup coconut sugar
- 1 tsp vanilla
- 2 1/2 cups almond flour
- 1/2 cup tapioca or arrowroot flour
- 1 tsp baking soda
- 1/2 tsp sea salt
Frosting
- 1/2 cup palm shortening
- 1/2 cup ghee
- 1/2 cup honey
- 2 Tbsp guava puree
- 1/2 cup tapioca flour
Instructions
- Puree in blender. Then pour into a small saucepan and cook on medium for about 20 minutes until some of the water has evaporated, stir frequently. Set aside to cool.
- In a medium bowl add eggs, coconut milk, ghee, sugar, and vanilla. Stir until well combined.
- Add flours, baking soda, and salt. Stir until combined.
- Add 1/2 cup of guava puree, stir.
- Scoop (I use a large ice cream scoop) into muffin pan lined with cupcake liners. Bake for 18-19 minutes, it is best to rotate the pan half-way through. Remove from the oven when a toothpick comes out clean. Let cool in the pan.
- While the cupcakes cool prepare the frosting. Once the cupcakes are completely cool frost them and store covered in refrigerator for 3-4 days. I have frozen these in an airtight container for up to 2 weeks and let thaw in the refrigerator overnight.
Frosting
- In a small bowl add all ingredients and stir until smooth. You can add more puree if you like it softer. If you want it sweeter add 1/4 cup powdered sugar.
