Lemon Chicken With Orzo and Vegetables

I love a one pan dinner that is full of flavor and is nutritious. This is a great dinner any time of year but the fresh lemon flavor just screams summer.

I try hard to create recipes that offer flexibility so you can use vegetables that you have on hand, you prefer, or are in season. This is my go to but I’ve offered other ideas in the notes. You can bump up the lemon flavor even more by adding the juice from the lemon just before you serve it up.

I love a quick one pan dinner full of flavor and that is nutritious. This is a great summer dish when it is warm outside because the fresh lemon flavor is full of summer but it comes together quickly.

Ingredients

  • 3 chicken breasts, sliced into cutlets
  • 1 tsp sea salt
  • 2 Tbsp olive oil
  • 1/2 bell pepper, chopped
  • 1 zucchini, sliced or cubed
  • 1/4 onion, chopped
  • 2-3 green onions, sliced
  • 1 tsp Italian seasoning
  • 1 cup cassava flour orzo, I use Jovial brand
  • 3 cups low sodium chicken broth
  • 1/4 cup coconut milk, full fat
  • zest of one lemon
  • Sea salt to finish

Instructions

  1. Sauce the chicken cutlets in oil in a pan on medium heat. Sprinkle salt on top. Cook until done, lightly brown on both sides, about 4 minutes on each side.
  2. Add the vegetables and Italian seasoning. If needed add a bit more oil. Let the vegetables cook for 3-4 minutes.
  3. Add the orzo and stir. Let cook for 2-3 minutes.
  4. Add the chicken broth, stir. Reduce heat to low and let the orzo cook until soft. This takes 10-15 minutes.
  5. Add the coconut milk, zest and a touch more salt to finish. Stir and let cook for 1 minute.

Notes

I love recipes that allow for flexibility and this is that so feel free to mix up the vegetables. Other veggies I've used and loved are frozen peas, shaved brussel sprouts, and broccoli florets.
