Paleo Lemon Glaze Donuts

Sometimes when I see a bag of lovely organic lemons at the store I can't help myself. I have many fond memories of our son making homemade lemonade as a little boy. It was probably the first thing he ever learned to make on his own. But a little lemon can go a long way...so what to do with that extra lemon or two? Donuts of course!

These donuts come together quickly. I often make them on the weekends for breakfast.

Using a non-stick donut pan just smooth out the batter and bake.

Golden brown and cooling. Just mix up the glaze and dip. Use a gentle touch, they are very moist.

Ready to devour! Dangerously delicious. Enjoy.

Paleo Lemon Glaze Donuts

These tart and sweet donuts are a luscious lemony treat.

Ingredients

  • 1 1/4 cups almond flour
  • 3 Tbsp coconut flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1 zest from one lemon
  • 2 large eggs
  • 1/4 cup coconut milk, full fat
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
Lemon Glaze
  • 1/4 cup tapioca flour
  • 1/4 cup powdered sugar
  • 1 Tbsp coconut oil, melted
  • 2 Tbsp lemon juice (adjust to get the consistency you prefer)

Instructions

  1. Preheat oven to 350 degrees. Lightly oil donut pan. Set aside.
  2. Combine all the dry ingredients in a medium size bowl and stir.
  3. In a small bowl combine all the wet ingredients in a small bowl and stir well.
  4. Pour wet ingredients into dry, stir well. A few lumps are ok, but it should be mostly smooth.
  5. Scoop the batter into the donut pan. Spread out tops to be flat and even.
  6. Bake for 17-20 minutes. Turn halfway through. Remove when toothpick comes out clean. Let cool completely in pan before removing. I use a tiny spatula and carefully go around the outside of each donut before tipping it over, this helps the donuts release much easier.
  7. Mix up the glaze in a small bowl and carefully dip each donut or you can spoon the glaze on.
