Paleo Lime Dragon Fruit Cookies

These cookies were created when I decided to buy freeze-dried dragon fruit at the grocery store one day. I had no idea at the time what I was going to do with freeze-dried dragon fruit...but cookies are always a hit so...

Lime Dragon Fruit Cookies

Tart and sweet cookies!

Ingredients

  • 2 1/4 cups almond flour
  • 1/4 cup tapioca flour ((or arrowroot))
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup ghee
  • 1/2 cup coconut sugar
  • 1 large egg ((at room temp))
  • 2 tsp lime zest, grated
  • 1 Tbsp lime juice
  • 1/2 tsp vanilla
Dragon Fruit Frosting
  • 1/2 cup palm oil shortening
  • 1/2 cup tapioca flour
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1/8 tsp sea salt
  • 2 tsp dragon fruit, freeze dried and powdered (I use a coffee grinder to powder the freeze dried fruit)

Instructions

Cookie Dough
  1. Preheat oven on 350 degrees. Prepare a 2 baking sheets with parchment paper and set aside.
  2. In a large bowl combine almond flour, tapioca flour, baking soda and salt. Stir.In a small bowl combine all of the remaining ingredients and stir.
  3. Stir the wet ingredients into the dry and stir until combined. Refrigerate for 15 minutes. This step helps the ghee set up a bit.
  4. Using a medium ice cream scoop, scoop out the cookie dough onto baking sheets. At least 2” apart. Press lightly with your fingers to flatten just slightly. Makes 16-17 cookies.
  5. Bake for 12-13 minutes. Turn halfway through time.Remove and let cool on baking sheet while you prepare the frosting.
Frosting
  1. In a small bowl combine the ingredients. Stir well using a spatula. If you need to adjust the consistency you can add a teaspoon of almond milk to loosen it or add a teaspoon more tapioca flour to make it firmer.
  2. When cookies are cool frost them and if you like you can sprinkle the top with lime zest or colored sprinkles of your choice. Enjoy.
