Paleo Chicken Pad Thai

I love the flavors of Thai food. This is an easy spin on Pad Thai that offers great flavor and a ton of flexibility. For this recipe I used the ramen noodles from Lotus Foods. You can use most any noodle but the Jade Pearl ones are a beautiful green color which I think amps up the beauty of this dish. You can use gluten free, cassava, or even zoodles if you like. I've done them all and each work very well.

I find that the recipes I love the most when cooking are those that allow me some freedom to use different vegetables depending on what is in season and what is in my refrigerator. I hope that you use this recipe as a guide and branch out to put your own twist on things.

Tonight I didn't top the dish off with anything but you can top with nuts or cilantro as desired.

I love Thai flavors and this paleo chicken pad thai is full of nutrient dense vegetables, chicken and noodles in a creamy sauce.

Ingredients

Sauce
  • 1/2 cup almond butter
  • 1/4 cup coconut aminos
  • 1/4 cup coconut milk
  • 2 Tbsp honey
  • 1 tsp fish sauce
  • 1 tsp red wine vinegar ((or rice vinegar))
  • 2 cloves garlice, chopped
Chicken and Vegetables
  • 1/2 onion, diced
  • 2 carrots, sliced or shredded
  • 1 bok choy, sliced
  • 1/2 bell pepper, diced
  • 2 green onions, sliced
  • 2 cups green cabbage, thinly sliced
  • 6 chicken thighs boneless & skinless, cut into bite size pieces ((or 2 chicken breasts))
  • 1 Tbsp olive oil
  • 3 Lotus Foods ramen noodle blocks

Instructions

  1. Combine all of the sauce ingredients in a blender and blend until smooth. Set aside.
  2. In a large skillet on medium-high heat cook the chicken in the oil until done. About 8-10 minutes.
  3. Start the water for the noodles so it is hot and ready when you need it.
  4. Add the vegetables, stir and let cook about 5-6 minutes.
  5. While the vegetables cook, cook the noodles per the package instructions.
  6. When noodles are done add them to the pan. Add the sauce and stir everything. Let everything cook together for 2-3 minutes to heat through.

Notes

You can have fun with this and mix up the vegetables to ingredients you prefer or what you have on hand. 


If you don't eat grains you can replace the rice noodles with zucchini zoodles, I've done this and it's delicious.


Toppings: I think it is fun to top off the dish with some fresh nuts (chopped macadamia nuts or cashews are my favorite) and sprinkle on fresh cilantro.
