Guava Nice Cream

I love ice cream. My first job was as a ‘soda jerk’ at an ice cream parlor. Even though I worked there off and on for 3 years I never tired of ice cream. It is definitely a go to treat for me. But, these days I rarely eat traditional ice cream or gelato, instead I opt for homemade nice cream.

Nice cream is basically bananas and coconut milk with whatever other ingredients are in season or you are craving. This guava nice cream was created after I went to our local farmers market in July and bought some fresh guava. Guava is a delicate and tropical flavor that is always refreshing.

If you don’t have access to fresh guava at your farmers market then I have given you measurements to use frozen guava or guava juice. Enjoy.

Fresh guava nice cream, delicate and sweet treat on a hot summer day.

Ingredients

  • 1 can coconut milk, full fat
  • 2 fresh guava, diced (or 1 cup frozen guava pieces)
  • 2 bananas, cut up then frozen

Instructions

  1. Freeze banana pieces for at least two hours. I lay them on parchment paper so they freeze nicely and don't stick together.
  2. Blend up the guava in coconut milk until smooth.
  3. Add the bananas and blend until smooth.
  4. Freeze for at least two hours.

Notes

If you can't find fresh guava or frozen guava you can use guava juice. Reduce coconut milk to 1 cup and use about 1/2 cup guava juice.
