Chicken with Peaches and broccoli (AIP)

I love a one skillet dish for hot summer days. In fact I can go weeks without turning the oven on in the summertime.

The day I created this recipe I had really ripe peaches and just needed to get dinner on the table. It is a light and delicate dish that is great for warm evenings.

Of course you can change up the vegetables if you like. I have also made it with cauliflower and green beans, tasty that way too. Have fun and enjoy!

This is a fun easy recipe for those hot summer days when peaches are ripe and sweet.

Ingredients

  • 2 boneless skinless chicken breasts, cut into cubes
  • 1 Tbsp olive oil
  • 1/2 red onion, diced
  • 2 heads broccoli, cut into florets
  • 1 peach, cut into small cubes
  • 1/2 cup white wine
  • 1/2 cup fresh basil, chopped
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the chicken in the oil until done, about 8 minutes.
  2. Add the onion, broccoli, and peaches. Stir and let cook 5 minutes.
  3. Add the wine and let the alcohol cook off, about a minute.
  4. Add the salt and pepper. Stir and top with fresh basil. Enjoy
