Fresh Tropical Papaya Salad Dressing

I had picked up a fresh papaya at the Farmer's Market. I used half for smoothies and then had the other half in the refrigerator. The next day inspiration hit with the idea for making my own papaya salad dressing. Hope you enjoy.

Fresh Papaya Salad Dressing

Ingredients

  • 1/2 fresh papaya, seeded, peeled and cut into chunks
  • 3/4 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/3 cup water
  • 2 Tbsp honey
  • 2 tsp sea salt
  • 1/2 lemon, juiced

Instructions

  1. Put everything into a blender and blend until smooth.
  2. I store in a Mason jar for up to 8 days in the refrigerator.
