Rainbow Rolls
During the summer months I often prepare meals without ever turning the oven on. I hate heating up the entire house to make a meal that will be eaten in just a few minutes.
I love a quick and easy recipe that allows for flexibility to change up the ingredients based on personal preference and what you have on hand. I think you will enjoy this fast lunch that even the kids can help prepare.

I love an easy and flexible recipe that doesn't require me to turn the oven on.
Ingredients
- 1 package of spring roll wrappers (rice paper, I use 2 for each person)
- 1 cup water
- 6-8 pieces of butter lettuce
- 1/4 red onion, thinly sliced
- 10 thinly sliced pieces of papaya
- 1/2 cup radicchio, thinly sliced
- 1 carrot, grated
- 1/2 lb chicken tenders (cooked)
Instructions
- Using a deep plate or pie plate pour the water in and submerge one piece of the rice paper at a time.
- Let the paper sit in the water for 20-30 seconds. Put onto a dry cutting board and make sure it doesn't have any wrinkles.
- Layer it in the middle, similar to how you would build a burrito, with the chicken and vegetables.
- Roll the paper up like a burrito. Enjoy
Notes
You can use any different combination of vegetables that you enjoy and different meat/fish as well. Sometimes I dip the roll in smashed up avocado or a paleo Asian sauce. Have fun with it and enjoy :)
