Rainbow Rolls

During the summer months I often prepare meals without ever turning the oven on. I hate heating up the entire house to make a meal that will be eaten in just a few minutes.

I love a quick and easy recipe that allows for flexibility to change up the ingredients based on personal preference and what you have on hand. I think you will enjoy this fast lunch that even the kids can help prepare.

I love an easy and flexible recipe that doesn't require me to turn the oven on.

Ingredients

  • 1 package of spring roll wrappers (rice paper, I use 2 for each person)
  • 1 cup water
  • 6-8 pieces of butter lettuce
  • 1/4 red onion, thinly sliced
  • 10 thinly sliced pieces of papaya
  • 1/2 cup radicchio, thinly sliced
  • 1 carrot, grated
  • 1/2 lb chicken tenders (cooked)

Instructions

  1. Using a deep plate or pie plate pour the water in and submerge one piece of the rice paper at a time.
  2. Let the paper sit in the water for 20-30 seconds. Put onto a dry cutting board and make sure it doesn't have any wrinkles.
  3. Layer it in the middle, similar to how you would build a burrito, with the chicken and vegetables.
  4. Roll the paper up like a burrito. Enjoy

Notes

You can use any different combination of vegetables that you enjoy and different meat/fish as well. Sometimes I dip the roll in smashed up avocado or a paleo Asian sauce. Have fun with it and enjoy :)
