Tasty Gluten Free Sausage Tortelloni Soup
This soup is easy to prepare and great for using up fridge basics. I like having the spicy Italian sausage links in the freeze for those weeknights when you need to get a healthy dinner on the table quickly.
This version has grain free tortelloni in it. But you can easy remove it or add white beans if you can tolerate them. It is a very flexible recipe.
For the tortelloni I used this brand.
In addition this recipe (except for the tortelloni) is wonderful to double and store in the freezer for later.
Sausage Tortelloni Soup
Gluten Free Sausage Tortellini Soup

This soup is warm and spicy and full of nutrients.
Ingredients
- 2 Tbsp olive oil
- 1/2 lb spice Italian sausage (remove casing)
- 1/4 red onion
- 2 carrots, diced
- 2 celery stalks, diced
- 1 garlic clove, minced
- 1 tsp sea salt
- 2 cups chicken bone broth
- 2 cups beef bone broth
- 1 cup water
- 1/2 head of escarole or 2-3 leaves of collard greens
- 1/2 lb grain free tortellini of your choice
Instructions
- In a Dutch oven over medium-high heat. Add oil and sausage. Break up the sausage and cook for about 4 minutes.
- Add the onion, carrots, celery and cook for another 2-3 minutes.
- Add garlic, salt, both broths, water and cook for 5 more minutes.
- Lastly, stir in the escarole/greens and tortellini and cook for about 5 minutes (or as package indicates).
