Thai Pork Skillet

Yes, you may have noticed I LOVE Thai flavors! I appreciate food that is full of different flavors and Thai food never disappoints.

This is yet another recipe that you can have fun with and mix up a bit. You can adjust the vegetables to what you have on hand or what is in season. You can add rice noodles or scoop it into a lettuce boat - get creative. This recipe is a wonderful and tasty starting point for many different dishes.

I think it is fun to see how many different vegetables I can sneak into a dish :)

I love Thai food and this versatile dish is tasty and fun. You can use it as it is or over rice noodles or put it into a lettuce wrap.

Ingredients

  • 1 Tbsp avocado oil or lard
  • 1 lb ground pork
  • ½ red onion, chopped
  • 2 stalks celery, chopped
  • ½ head cauliflower, chopped into small florets
  • 2 carrots, diced
  • 1 zucchini, cut into small cubes
  • 3-4 green onions, diced
  • 1 Tbsp fresh grated ginger
  • 2 cloves garlic, minced
  • 1/3 cup coconut aminos
  • 1 Tbsp fish sauce
  • Juice of ½ lime
  • 1 Tbsp fresh mint, chopped
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh chives, chopped
  • ¼ cup cashews, chopped

Instructions

  1. Cook the pork in oil until done, about 6-7 minutes. Break up into small pieces with spoon or spatula.
  2. Add the onion, celery, cauliflower, and carrots, stir and let cook about 5 minutes.
  3. Add the zucchini, green onions, ginger, and garlic. Stir then add the coconut aminos and fish sauce. Stir and let cook 3-4 minutes.
  4. Add the lime juice and herbs. Stir and remove from heat.
  5. Scoop into a bowl and top with cashews. Enjoy
  6. Can serve with rice noodles or in lettuce wrap.
